Yes, fish can "drown", and that's basically what happens when they are out of the water! I don't quite understand it, but they are equipped to get their oxygen from water, and I believe they aren't capable of separating oxygen from the other components of our atmosphere, like nitrogen, hydrogen and carbon dioxide.
As far as birds getting airsick, I would think that could happen if they fly coach!

Okay, I did a little research, and apparently the problem with fish out of water is that their gills need the buoyancy of water in order to function, and without that buoyancy, the gills collapse, so they cannot obtain oxygen, and they basically suffocate.

When a fish is out of water for a short time, you have to put him back in but move the fish with your hands until his gills start working again. Poor fish.

They are jumping out because they don't want to be in jail,lol, or there is not enough plant life in the aquarium to give them enough to breath properly. I never heard of that before.
