"nothing too fancy" is my area of expertise! [You must be registered and logged in to see this image.]

(Increasing the amounts to suit the number to be fed...)
1 lb ground round (hamburger)
1 raw egg
1 1/2 cups crushed soda crackers
1 half smallish yellow or white onion - diced
8 oz catsup (OR 1 8oz can tomato sauce OR... 1 can Campbell's tomato soup)

Place hamburger in oblong/rectangular baking dish.
Crush crackers by hand or with rolling pin.
Dice onion medium fine.
Crack egg.

Knead crushed crackers, diced onion and raw egg into
1 pound hamburger.
Mix well and shape into loaf.
Place in oven on bake at 375* for approximately 1 hour.
Pour catsup, (best choice IMO) tomato sauce or soup over
top of loaf approx 30-40 minutes into baking time.

Viola! Meat loaf - possibly the world's simplest meat loaf.
Feel free to add anything that sounds good to your meatloaf -
i.e.; diced bell pepper. You may also substitute 1/2 lb ground pork
for 1/2 lb hamburger...

That recipe sounds very close to what my Mom used to make. She also added celery and green peppers. Of course, she didn't write these things down ... she just knew how to cook. I may have to "experiment" with cooking some meatloaf ... better stock-up on the PeptoBismol! rollonfloor

hamburger... it's hard to screw that up.
Trust me; I can make meatloaf, ergo: YOU -
and everyone else! can make meatloaf.
The rest of the ingredients are a matter of taste
and feel. For instance - the crackers are for texture -
(and to make the hamburger go further. Clever, no?
When they start not holding the loaf together -
you've added enough.
Also, for speed, you can make individual, smaller meatloaves.
Celery, huh? I never would have thought of celery. Hmmm...

My meatloaf varies, depending on what I have and what I want to use. [You must be registered and logged in to see this image.]
It's basically like Ja'aj's, but sometimes I use Italian seasoned bread crumbs (really fine like you'd use to coat chicken or pork chops) or I'll use bread that I dip in water and squeeze out excess water.
I don't measure anything! lol I go by look.
I also use ketchup on top. I usually save bottles of ketchup that hardly have anything left, add just a little water to shake it up and get it all out of the bottle.

I gave up loaf pans a long time ago and use this...

i just add onions, garlik, parsley ,tomato/worstershire/soy sauce ,crumbed bread,and what ever is on hand .pouring over a can of tomato soup is new to me, it makes gravy ?

So, Bunny, how'd your meatloaf turn out?
Rox, the tomato soup (Campbells suggestion [You must be registered and logged in to see this image.])
is 'absorbed' by the meatloaf; mostly it adds
flavor and "moist"... much like catsup but the catsup
remains independent. (?)
