Smelts – more precisely freshwater smelts or typical smelts to distinguish them from the related Argentinidae, Bathylagidae and Retropinnidae – are a family of small fish, Osmeridae, found in the Atlantic and Pacific Oceans. They are common in the North American Great Lakes, and in the lakes and seas of the northern part of Europe, and run in large shoals along the coastline during their spring migration to their spawning streams. The Delta Smelt, Hypomesus transpacificus is found in the Sacramento Delta of California, and is an endangered species.
It is one of the few fish that sportsmen are allowed to net, using dip nets, either along the coastline or in the streams. Some sportsmen also ice fish for smelt. Smelt are often fried and eaten whole.

Australian Smelt
A wide-spread species throughout the south-east of the Australian continent. Occurs in coastal drainages down the eastern seaboard from about the Fitzroy River in Queensland to the south-east corner of South Australia. Occurs extensively in tributaries in the southern part of the Murray-Darling system including the Darling downstream from around Wilcannia and a number of smaller disconnected river and creek systems in the north-western part of New South Wales extending into south western Queensland. Also found in the Coopers Creek system which drains into Lake Eyre.

Here is a a start on some information.
I made the smelt.
Not a fan of batter? Do what I do most often then: Season flour and fry them that way. With just a hint of spice and crust, these little delicacies fly off the plate. I have eaten 50 at a sitting. And yes, I am proud of that.
